When the Spanish explorer Hernando Cortez went toMexico in the early sixteenth century, the Aztec Indians treated him and his companions to abitter drink called “xocolatl.” It was made from cocoa and believed by the Aztecs to be thefood of the gods, only to be drunk by the royal family and special guests.          Cortez thought that, with sugar added to it, the drink had commercial potential back inEurope. He was right, and drinking chocolate quickly found favor among wealthy nobles inSpain. Its popularity spread around Europe, and the Spanish began planting cocoa beans intheir overseas colonies. They also managed to keep the secrets of the making of the drink tothemselves for over a hundred years.          The first eating chocolate did not appear until 1848, when Joseph Storrs Fry made achocolate bar in England. Twenty-eight years later, Swiss businessman Daniel Peter addedmilk powder to chocolate and marketed the first milk chocolate. The way chocolate bars aremade has changed little since then.
