Have you ever stared into that cup of green tea and wondered how it was produced? It’s actually an easier process thanyou think, involving just five simple steps: plucking (採青), withering (凋萎), rolling (翻滾;揉捻), exposure to oxygen(浪菁;氧化發酵), and drying or firing.       Before anything can happen, tea leaves must first, of course, be plucked. To ensure the highest quality, only the bud andtwo small leaves are picked from the best tea plants. Next comes the withering, during which the leaves are dried usingbamboo trays (托盤), laid out in large indoor areas. This removes the water content, making them flexible enough to proceedto the next step: rolling. Rolling is often done using machines, to soften and shape the leaves. This breaks down the cellstructure and releases the juices and oils from the leaves, allowing for a more balanced exposure to oxygen later. Exposure tooxygen is the chemical process that determines the tea leaves’ color. The browner the leaf is, the more exposure to oxygen ithas had – similar to how an apple turns brown when it comes into contact with air. Last but not least, the leaves are dried or“fired” using large ovens or machines to stop the exposure to oxygen and to seal in the flavor. It isn’t until all these steps areperformed that the tea-making process is finally complete. So, the next time you pick up that cup of green tea, think of all ittook to get it into your cup!
